15 Minute Gyudon

The Lowdown:

Ingredients:

  • 1½ cups uncooked Japanese rice
  • 250g shabu beef slices
  • 1 brown onion, thinly sliced
  • 1 cup water
  • 1 tsp dashi powder
  • 2 tbsp mirin
  • 2 tbsp kikkoman soy sauce
  • 1 tbsp white/brown sugar
  • 1 tsp grated ginger
  • Spring onion, chopped (for garnish)
  • Sesame seeds (for garnish)

Steps:

  1. In a pan, add water, dashi, soy sauce, mirin, grated ginger, sugar, and sliced onions. Bring to a simmer over medium heat and let it cook for 7-10 minutes, until the onions soften and the flavors meld together.
  2. Add the beef slices to the pan, making sure they are fully submerged in the broth. Cook until the beef reaches your desired level of doneness, usually about 2-3 minutes.
  3. To serve, place a portion of steamed rice in a bowl, then ladle the beef and onion mixture over the top. Garnish with chopped spring onions and a sprinkle of sesame seeds.
