20 Minute Miso Butter Shells

Our Miso Butter Shells are a flavor explosion you don't want to miss. Imagine tender pasta shells soaking up a rich miso-butter sauce, perfectly complemented by savory minced pork and earthy mushrooms. Add a splash of soy sauce, and you’ve got a dish that’s pure umami bliss!

Ingredients
- 2 tbsp olive oil
- 1/2 brown onion
- 3 cloves garlic, minced
- 200g Swiss brown mushroom, sliced
- 200g minced pork meat
- 200g short pasta of choice (e.g. Shells, fusilli, penne)
- 2 tbsp butter
- 2 tbsp white miso paste (the kind with dashi would be best)
- 1-2 tbsp light soy sauce (kikkoman preferred)
- 1/2 cup pasta cooking water
- 1 tsp sugar (optional)
- Salt & black pepper to taste
Steps:

Sauté the Aromatics:
- Heat 2 tbsp of olive oil in a large pan over medium heat.
- Add minced onion & garlic. Sauté until they are browned and fragrant.

Sauté the Mushrooms:
- Add in the sliced mushrooms, spreading them out in a single layer and leaving them untouched for 2-3 mins to sear and release their earthy umami flavours.
- The mushrooms may release liquid so keep sautéing until the liquid evaporates and the mushroom mixture is dry.

Cook the Pork:
- Add the minced pork to the pan, season with a pinch of salt and fry until it’s browned and cooked through.

Add Flavors:
- Mix in salt, 2 tbsp of butter, and the miso paste (ensure it’s pre-mixed with a little bit of water for smooth incorporation).

Combine Liquids:
- Pour in 1/2 cup of pasta cooking water and 1 tbsp of soy sauce. Stir well to create a luscious sauce.

Mix in the Pasta:
- Add the al dente pasta to the pan and cook until everything is well combined and the pasta has absorbed the flavors to your liking.
