Anchovy, Chilli and Tomato Pasta

  • Anchovy fillets
  • Red chillies (quantity based on desired spice level)
  • 6-10 cherry tomatoes
  • 2-3 tbsp olive oil
  • 2-3 cloves of garlic, sliced
  • Salt and black pepper (to taste)
  • Grated parmesan cheese
  • Fresh basil
  • Lemon juice
  • Spaghetti enough for two 



  1. Saute onion over low-medium heat, just before they turn brown. Add anchovies in to the pan. Keep stirring until they begin to break down and melt into the oil.
  2. Add chilli and garlic, continue to  sauté for 1-2 minutes until fragrant 
  3. Add tomato to the pan, and add a pinch of salt to season.
  4. Add a squeeze of lemon and chopped basil in.

  5. Once the sauce has cooked down and thickened slightly, add the cooked spaghetti to the pan. Toss the pasta in the sauce until well coated, adding a splash of reserved pasta cooking water.

  6. Cook for an additional 1-2 minutes, allowing the pasta to absorb the flavors of the sauce. Add a sprinkle of grated Parmesan cheese.
  7. Once you reach this stage, dish out and enjoy immediately! (because pasta waits for no man).
