Classic Japanese Udon Soup

 

The Lowdown: 

The classic Japanese udon soup is the quintessential form of comfort food that can warm up any weary soul. Just imagine a piping hot bowl of bouncy udon noodles on a cold rainy day, and all done in 10 mins. Enjoy it with a poached egg, sliced shabu meat or tempura. The combinations are endless!


Ingredients

(Serves two to three) 

2 udon noodle block

1200ml water

⅓ cup shiro dashi (concentrated white dashi noodle broth)

2 tbsp mirin

 

Garnish:

Chopped spring onion, grated ginger, katsuobushi flakes

Alternative soup seasoning without shiro dashi (but will be darker in colour):

2 tbsp sachet of dash powder

1 tbsp light soy sauce

2 tbsp mirin

 

 

Steps:

  1. Bring water to a boil. Add shiro dashi, mirin and frozen udon
  2. Once udon is cooked, serve with ginger, spring onion and katsuobushi flakes.
  3. Enjoy!
