Creamy Salmon Stew

The Lowdown: 

Cozy up with a bowl of our easy creamy salmon stew 🍲✨

Tender salmon cubes, sautéed veggies, and a creamy broth that’s rich and satisfying. Perfect for those chilly nights when you need some extra loving 🫶🏻 Pair it with crusty bread, use it as a pasta sauce, or serve it on a bed of white rice.

Ingredients

- 300g salmon, cubed
- 1 brown onion, diced
- 200g white mushrooms, halved
- 1 carrot, cut into medium-sized chunks
- 1 big potato, cut into medium-sized chunks
- ¼ broccoli, cut into smaller pieces
- 300-400ml boiling water
- 1 dashi pack
- 1½ tbsp unsalted butter
- 1½ tbsp plain flour
- 200ml milk

Steps:

  1. Sauté the Salmon:
    • In a large pan, heat up some oil over medium heat.
    • Add the salmon cubes and sauté until browned on all sides.
    • Remove the salmon from the pan and set aside, leaving any residual salmon oil in the pan.
  2. Cook the Vegetables:
    • In the same pan, add the diced onion, and sauté until the onions are translucent.
    • Add in the chunks of potato, carrot, and mushrooms.
  3. Simmer:
    • Add enough boiling water to cover the vegetables (approximately 300-400ml)
    • Reduce the heat, cover and let it simmer until the potatoes and carrots are cooked through.
  4. Prepare the Cream Base:
    • In a separate heavy-bottomed casserole pot (you will be using this to serve your stew in), melt the butter over medium heat.
    • Stir in the flour to create a roux, cooking for a minute or until lightly golden.
    • Gradually add the milk, stirring constantly to avoid lumps.
    • Cook until the mixture thickens into a creamy sauce.
  5. Combine Everything:
    • Pour the now softened vegetables, together with the liquid into the creamy sauce.
    • Add in the broccoli and let it simmer till softened.
    • Return the seared salmon cubes back into the casserole and stir gently to combine.
    • Let it simmer for a few more minutes to let the flavors meld together.
  6. Serve:
    • Ladle the stew into bowls and enjoy hot.
    • Pair with crusty bread for an even more satisfying meal.
