  • 2 cloves garlic, minced
  • 1 cup minced carrots
  • 500g minced pork
  • Salt to taste
  • 1 litre chicken stock
  • 2 cans of chopped tomatoes (400g each)
  • 3 tbsp tomato paste
  • 2-3 bay leaves
  • 1 tsp dried parsley or 2 tablespoons fresh parsley, chopped
  • 8-10 lasagna noodles, broken into pieces
  • 1 pack of cooking cream (200ml)
  • 1 cup mozzarella cheese

  1. Sauté the Aromatics:
    • In a large pot, heat some oil over medium heat. Add the diced garlic and minced carrots. Sauté until fragrant and the carrots are slightly softened.
  2. Cook the Pork:
    • Add the minced pork to the pot. Cook, stirring frequently, until the pork is browned and cooked through. Season with a pinch of salt.
  3. Build the Soup Base:
    • Add chicken stock to deglaze the pot, then stir in the tomato paste and canned tomatoes. Add the bay leaves and parsley. Bring the mixture to a boil.
  4. Cook the Noodles:
    • Once the soup is boiling, add the broken lasagna noodles. Reduce the heat and let it simmer until the noodles are cooked to your liking.
  5. Finish with Creaminess:
    • Stir in the cooking cream and cheese. Let the soup simmer for a few more minutes until the cheese is melted and the soup is creamy.

Serve hot and cuddle up with your favourite movie! 🍜🧄🥕🍅
