Ingredients

1 kg yam
20 gingko nuts
150g brown sugar
100g water
6 pandan leaves, cut into about 4 inches length
2 shallots
450ml water

Steps:

Prepare the Gingko Syrup

  • In a small pot, combine gingko nuts, brown sugar, water and pandan leaves.
  • Bring the mixture to a boil, then let it simmer for about 5 minutes, leave the gingko nuts inside to absorb the flavours.

Fry the Shallots

  • Heat a small amount of cooking oil in a frying pan.
  • Add the thinly sliced shallots with a pinch of salt and fry until they turn golden and crispy.
  • Remove the shallots from the oil and set them aside, leaving the oil in the pan for later use.

Steam the Yam

  • Peel and cut the yam into evenly sized pieces.
  • Steam the yam until it becomes soft and tender (approximately 20 minutes).

Blend the Yam

  • Transfer the steamed yam to a blender.
  • Add water and brown sugar.
  • Blend the mixture until you achieve a smooth, creamy consistency.

Combine in the Frying Pan

  • Pour the blended yam mixture back into the frying pan, using the leftover oil from frying the shallots.
  • Stir the mixture over low heat, allowing the flavours to meld and the paste to thicken slightly.
