Scallion Oil Chicken

The Lowdown:
This scallion oil chicken will always bring back the feeling of home 😌 It’s a versatile stir fry dish that can be added to any Chinese home cooked meal. Simple yet so comforting, a bowl of white rice is a must!
Ingredients
- 250g boneless chicken leg, cut into big chunks
- 1/2 brown onion, sliced
- 3-4 slices of old ginger
- 3 stalks of spring onions (separate white stems from green leaves)
- 180ml water
Chicken marinade:
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 2 tbsps shao xing wine
- 1 tbsp thick caramel dark soy sauce
- 1 tsp white sugar
- White pepper (optional)
Steps:

Marinate the Chicken:
- Mix the light soy sauce, oyster sauce, shao xing wine, dark soy saucem white pepper, and sugar together.
- Add the chicken chunks and let them marinate for at least 1 hour.

Sauté Aromatics:
- In a pan, heat some oil and sauté ginger, scallion stems, and onions until fragrant.

Cook the Chicken:
- Add the marinated chicken to the pan and cook until the pieces start to brown.
- Pour in any remaining marinade and the water.

Add Scallion Leaves:
- Stir in the scallion leaves and cook until they are wilted and the chicken is fully cooked.

Serve and Enjoy:
- Best served over a bed of steaming rice. Enjoy!
