Clam pasta like you’ve never had it before: where the briny goodness of clams meets the umami-rich flavor of shio kombu, with a hint of chilli 🌶️ This one’s definitely making it to your pasta rotation
Ingredients
- 600g clams
- 2 cloves garlic, minced
- 1 tbsp salted konbu (shio kombu)
- 1 tsp green seaweed (for garnish)
- 2 tbsp extra virgin olive oil
- 150ml reserved pasta water (from cooking the pasta)
- 170g pasta (spaghetti or linguine)
- Chilli flakes (peperoncino), to taste
- Salt and black pepper, to taste
Steps:
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 150ml of the pasta water, then drain the pasta.
- Sauté Garlic and Chilli Flakes: In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and chili flakes, sautéing for about 1 minute until fragrant.
- Add Clams and Shio Kombu: Stir in the cleaned clams along with the reserved pasta water and salted konbu. Cook for about 2-3 minutes until the clams start to open up.
- Combine Pasta & Sauce: Add the drained pasta to the skillet, tossing it with the clam mixture. If needed, add more reserved pasta water to achieve your desired sauce consistency.
- Season & Serve: Season with salt, black pepper, and additional chili flakes to taste. Garnish with green seaweed for an extra touch of flavor.
