Ingredients

  • 600g clams
  • 2 cloves garlic, minced
  • 1 tbsp salted konbu (shio kombu)
  • 1 tsp green seaweed (for garnish)
  • 2 tbsp extra virgin olive oil
  • 150ml reserved pasta water (from cooking the pasta)
  • 170g pasta (spaghetti or linguine)
  • Chilli flakes (peperoncino), to taste
  • Salt and black pepper, to taste

Steps:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 150ml of the pasta water, then drain the pasta.
  2. Sauté Garlic and Chilli Flakes: In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and chili flakes, sautéing for about 1 minute until fragrant.
  3. Add Clams and Shio Kombu: Stir in the cleaned clams along with the reserved pasta water and salted konbu. Cook for about 2-3 minutes until the clams start to open up.
  4. Combine Pasta & Sauce: Add the drained pasta to the skillet, tossing it with the clam mixture. If needed, add more reserved pasta water to achieve your desired sauce consistency.
  5. Season & Serve: Season with salt, black pepper, and additional chili flakes to taste. Garnish with green seaweed for an extra touch of flavor.
  6. Enjoy: Plate your Shio Kombu Clam Pasta and savor this savory dish that's perfect for any occasion!
