- 80 g diced tomatoes
- 200 ml cooking cream
- ½ cup pasta water
- 40 g grated Parmesan cheese (plus extra for serving)
- 1½ Tbsp fresh parsley, chopped (optional, for garnish)
Steps:
1. Cook the Pasta:
Start by cooking the penne pasta in a pot of salted water according to package instructions until al dente. Once done, reserve a little bit of pasta water to help adjust the sauce later. Drain the pasta and keep it covered to stay warm.
2. Prepare the Shrimp:
While your pasta is cooking, season the shrimp with 1 Tbsp of taco seasoning. In a large skillet, heat olive oil over medium heat. Once the oil is hot, add the shrimp in a single layer and cook for about 1-2 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and cover to keep warm.
3. Make the Sauce:

4. Combine and Serve:
Add the cooked shrimp and pasta back into the skillet with the sauce. Toss everything together until the pasta is evenly coated with the creamy taco sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
