20 Minute Easy Tuna Pasta

Day 1 in our 20 pastas 20 minutes series: Easy tuna pasta
You may think of tuna as a sandwich filling but wait till you try this recipe for a quick weeknight dinner when you need something tasty and fast. A simple, savory dish that's got that umami hit that will surprise you. Save this to your collection and tag us when you try it! 😋✌🏻
Ingredients
- 180g short pasta of your choice
- 1 can of tuna, drained (can be oil/water base)
- Half a zucchini, diced
- 2 tbsp butter
- 1 tbsp olive oil
- Freshly ground pepper
- Grated parmigiano
- Salt
- (Optional) Chili oil for an extra kick 🌶️
Steps:

Prepare Ingredients:
- Dice half a zucchini.
- Cook the pasta in salted boiling water according to package instructions or till al dente.

Sauté Tuna and Zucchini:
- In a pan, melt butter and sauté the tuna, breaking it up in a single layer.
- When tuna starts to look a little drier and toasted, add the diced zucchini.
- The tuna should look toasted and slighlty golden so you get that delicious umami flavour, and the zucchini would’ve started to soften.

Combine Pasta and Cheese:
- Toss in the cooked pasta, along with some pasta water (you can start with 1/4 cup and adjust till you reach the saucy consistency you desire).
- Stir and work it in until it emulsifies into a ‘creamy’ sauce.
- Grate some parmigiano-reggiano cheese for extra decadence and umami.
- Finish off with salt and some freshly ground black pepper and an optional drizzle of extra virgin olive oil.

Serve:
- Serve your creamy tuna pasta hot, and optionally, drizzle with some chili oil for an extra kick!
