Broccoli Cheddar Soup

Ingredients

  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • 3 garlic cloves, chopped
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 2 cups water + 1 tablespoon chicken stock
  • 3 cups broccoli florets
  • 1 cup chopped broccoli
  • ½ teaspoon Dijon mustard
  • 8 ounces shredded cheddar cheese (about 2 heaping cups or 4 slices)

    Steps:

    1. Sauté the Base: Melt the butter over medium heat. Add the chopped onion, salt, and a few grinds of black pepper. Cook for about 5 minutes until the onion is softened.
    2. Add Garlic and Flour: Stir in the chopped garlic and cook for another minute. Then, sprinkle in the flour and whisk continuously for 1 to 2 minutes until the flour turns golden.
    3. Incorporate Liquids: Slowly pour in the whole milk while whisking continuously to avoid lumps. Next, add the broth, broccoli, and Dijon mustard. Stir to combine.
    4. Simmer: Allow the soup to simmer for 15 to 20 minutes until the broccoli is tender.
    5. Melt the Cheese: Add the shredded cheddar cheese, stir until fully melted and creamy. Season with additional salt and pepper to taste.
    6. Serve: Ladle the soup into bowls and serve hot. For an extra touch, top with croutons or fresh herbs if desired.
