This pasta comes together in minutes but feels like a real treat. Perfect for those busy days when you still want something fresh and homemade - your new go-to for an easy, cozy dinner. Don’t forget to save this one for later ✌🏼
Ingredients
- ⅓ cup extra virgin olive oil (EVOO)
- 1 box of fresh cherry tomatoes, halved (200g)
- 4 cloves of garlic, sliced
- Dried peperoncino flakes
- Freshly grated parmesan cheese
- 1 cup of basil leaves
- Salt
- Pasta of your choice for two (approximately 200g)
- ¼ cup pasta cooking water
Steps:
Step 1: Sauté the Garlic
Heat a generous drizzle of EVOO in a large pan over low heat. Add thinly sliced garlic and gently sauté until it's golden and fragrant. Keep the heat low so the garlic doesn’t burn—it should just soften and release its aroma.
Step 2: Burst the Tomatoes
Toss in halved cherry tomatoes and a pinch of salt. Stir occasionally, cooking over medium heat until the tomatoes start to burst and release their juices, creating a light, flavorful sauce.
Step 3: Add a Touch of Heat
For a little extra kick, sprinkle in some dried Italian chili flakes. Adjust to your heat preference—start small and add more if you like it spicier!
Step 4: Incorporate the Pasta
Once your pasta is cooked to al dente, reserve a cup of the pasta water and drain the rest. Add the pasta directly to the pan with the tomatoes. Gradually mix in the reserved pasta water to create a silky sauce that clings to the noodles.
Step 5: Finish with Parmesan
Sprinkle a generous handful of shaved parmesan over the pasta and stir until it's fully melted and incorporated. The cheese will give the dish a creamy, savory finish that complements the bright flavors of the tomatoes. Once you reach this stage, dish out and enjoy immediately! (because pasta waits for no man).
