Chinese restaurant style steamed fish sauce

The quintessential classic “Chinese restaurants steamed fish sauce”—a recipe everyone should have in their pocket. Following the Cantonese style of steamed fish, this sauce is savoury, a little sweet, and superr addictive. You’d easily finish a bowl of rice with this, don’t say we didn’t warn ya!
1 stalk of spring onion (white part - keep green part for garnish), julienned
2 stalks of coriander
1-inch piece ginger, julienned
2 tbsp oil
1 tbsp soy sauce
1 tbsp shao xing wine
½ tsp sugar
2 tbsp water
Sauté white parts of the spring onion and ginger in oil, then add rest of the sauce ingredients and bring to boil. Garnish the steamed fish with coriander and the green parts of the spring onion. Pour bubbling mixture over all of it.
