Get cozy with this wholesome pot of Lasagna Soup✨🍲
Imagine all the hearty goodness of lasagna, nestled in a rich tomato cream broth. One pot only, 100% comfort. Tastes even better when cuddled up over your favourite movie. Save this recipe for those rainy nights or when you need a hug in a bowl 🫶🏻
Ingredients
- 2 cloves garlic, minced
- 1 cup minced carrots
- 500g minced pork
- Salt to taste
- 1 litre chicken stock
- 2 cans of chopped tomatoes (400g each)
- 3 tbsp tomato paste
- 2-3 bay leaves
- 1 tsp dried parsley or 2 tablespoons fresh parsley, chopped
- 8-10 lasagna noodles, broken into pieces
- 1 pack of cooking cream (200ml)
- 1 cup mozzarella cheese
Steps:

Sauté the Aromatics:
- In a large pot, heat some oil over medium heat. Add the diced garlic and minced carrots. Sauté until fragrant and the carrots are slightly softened.

Cook the Pork:
- Add the minced pork to the pot. Cook, stirring frequently, until the pork is browned and cooked through. Season with a pinch of salt.

Build the Soup Base:
- Add chicken stock to deglaze the pot, then stir in the tomato paste and canned tomatoes. Add the bay leaves and parsley. Bring the mixture to a boil.

Cook the Noodles:
- Once the soup is boiling, add the broken lasagna noodles. Reduce the heat and let it simmer until the noodles are cooked to your liking.

Finish with Creaminess:
- Stir in the cooking cream and cheese. Let the soup simmer for a few more minutes until the cheese is melted and the soup is creamy.
