Olive Fried Rice


The Lowdown: 

Olive fried rice and a perfect fried egg always brings back a feeling of nostalgia and school canteen lunches 🍳



1 tbsp olive oil

¼ brown onion, finely diced

3 cloves minced garlic

1 cup cooked rice

2 tbsp olive vegetable

Fish sauce (optional)

1 sunny side egg 



  1. Heat the Olive Oil:

    • In a large skillet or wok, heat 1 tbsp of olive oil over medium heat.
  2. Sauté the Aromatics:

    • Add the finely diced brown onion to the skillet. Sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
    • Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to prevent burning.
  3. Add the Rice:

    • Increase the heat to medium-high and add the cooked rice to the skillet. Stir well to combine the rice with the sautéed onions and garlic, breaking up any clumps.
  4. Incorporate the Olive Vegetable:

    • Add 2 tbsp of olive vegetable to the rice mixture. Stir thoroughly to ensure the olive vegetable is evenly distributed throughout the rice.
  5. Optional Fish Sauce:

    • If desired, add a splash of fish sauce for an extra layer of umami. Stir to combine and let the flavors meld together for about 1-2 minutes.
  6. Prepare the Sunny Side Egg:

    • In a separate non-stick pan, cook a sunny side egg to your liking. Ensure the yolk remains runny for the best flavor contrast with the rice.
