Olive Fried Rice

The Lowdown:
Olive fried rice and a perfect fried egg always brings back a feeling of nostalgia and school canteen lunches 🍳
Ingredients
1 tbsp olive oil
¼ brown onion, finely diced
3 cloves minced garlic
1 cup cooked rice
2 tbsp olive vegetable
Fish sauce (optional)
1 sunny side egg
Steps:

Heat the Olive Oil:
- In a large skillet or wok, heat 1 tbsp of olive oil over medium heat.

Sauté the Aromatics:
- Add the finely diced brown onion to the skillet. Sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
- Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to prevent burning.

Add the Rice:
- Increase the heat to medium-high and add the cooked rice to the skillet. Stir well to combine the rice with the sautéed onions and garlic, breaking up any clumps.

Incorporate the Olive Vegetable:
- Add 2 tbsp of olive vegetable to the rice mixture. Stir thoroughly to ensure the olive vegetable is evenly distributed throughout the rice.

Optional Fish Sauce:
- If desired, add a splash of fish sauce for an extra layer of umami. Stir to combine and let the flavors meld together for about 1-2 minutes.

Prepare the Sunny Side Egg:
- In a separate non-stick pan, cook a sunny side egg to your liking. Ensure the yolk remains runny for the best flavor contrast with the rice.
