These Spicy Shrimp Sushi Cups are so addictive 🍤🍣 So easy to make and even easier to devour 🤤
Imagine plump shrimps, in perfect chunks, broiled and golden brown, mingling with creamy mayo and a kick of Sriracha chili. Layered with crispy nori seaweed, it's a flavour combo that's too good to miss!

(Makes approximately 8 sushi cups)
Ingredients
- 8-10 shrimps, peeled, deveined & cubed
- 2 tbsp Japanese mayo
- 1 tbsp Sriracha chili sauce
- 1 tbsp Japanese soy sauce
- A pinch of salt
- Nori seaweed
- Sushi rice, prepared with rice vinegar and cooled (1 cup uncooked Japanese rice grains)
- Spring onion, for garnish
Steps:
- Marinate the Shrimp: In a mixing bowl, add the Japanese mayo, Sriracha chili sauce, and Japanese soy sauce. Mix well with the cubed shrimps until they are thoroughly coated.
- Prepare the Seaweed: Cut the nori seaweed into square shapes, ensuring they fit inside your baking square cups or muffin tray.
- Prepare the Sushi Rice: Prepare sushi rice according to package instructions, adding rice vinegar once cooked and allowing it to cool and get sticky.

Assemble the Sushi Bake:
- Place a square of seaweed at the bottom of each baking cup.
- Add a layer of cooled sushi rice on top of the seaweed.
- Top with the marinated shrimp mixture.
- Bake: Preheat your oven to 190°C (convection fan mode). Bake the sushi cups for 15 minutes. Then, switch to the broiler setting at 200°C and broil for an additional 3 minutes to achieve a slightly crispy top.
- Garnish and Serve: Once baked, let them cool slightly before serving. Garnish with finely sliced spring onions. Enjoy your Spicy Shrimp Sushi Cups hot and fresh!
